Aloo posto is a traditional Bengali recipe of potatoes in a lightly spiced poppy seeds paste. The three essential ingredients apart from potatoes that cannot be substituted in the recipe are Panch foron (five spices mixed), mustard oil and poppy seeds. The addition of mustard oil in this recipe brings out a lovely pungent flavour to the dish. Aloo posto is always served with steamed rice accompanied with kalai dal (urad dal). Ingredients:- Potato - 250gm. Poppy seeds/ posto - 25gm. Mustard oil - 15gm. Salt to taste Green chili - 2 Panch foron - 1 tsp.
