This is how my grandmother used to make bread every morning when I was little. She baked this bread in a wood-fired oven and hummed Ukrainian songs. She used to say all the time: to make the bread perfectly cooked - you must sing songs to it)))) I used to wake up all the time from this aroma and change, run to the oven and break off a piece of bread and eat it with fresh steamed milk with great pleasure. I miss this time very much.... I really hope you will like this bread). Ingredients, recipe and cooking technology: Ingredients for 1 loaf 410 ml of water 120 g sourdough starter 10 g salt 350 g whole wheat flour 150 g bread flour Preparation technique: Combine the water, sourdough starter and salt. Stir everything together, then add the flour. 1. Knead the dough. Approximately 12 minutes. Let the dough rest for 45 minutes. Cover the bowl with clingfilm or a towel. 2. Then knead the dough thoroughly again and let rest again for 1 hour. Cover the bowl of dough with a towel each time. 3. Fold the dough with wet hands as in the video and transfer it to the bowl. Cover with a towel and let rest for 1 hour minutes. 4. With wet hands, make another fold and cover the bowl with the pestle. Leave the dough to rest for another 1 hour. 5. Sprinkle the table with flour and place the dough on the table. 6. The dough needs to be left on one side, do not turn the dough over. You need to fold the edges of the dough inwards and round the dough. Make a ball as in the video. Gradually stretch the ball to make it tight. 7. Sprinkle the baskets with flour. Put the pieces in the baskets, cover the baskets with foil. Put the basket with the bread blank in the refrigerator for 10-12 hours. 9. The next day, take the billets out of the refrigerator, spread it out on baking paper. Using a sharp knife, make a cut.
