I also share a secret to *always* getting that smoky firewood jollof rice at home. Here is the list of ingredients Marinade for the shrimps garlic powder, lemon pepper seasoning, smoked paprika, salt, chilli pepper Pepper mix(blended - 2 large red bell peppers, 1 large tomato, 1 medium onion, 2 scotch bonnets, 1/2 a thumb of ginger. 3 cooking spoonfuls of vegetable oil, 4tbs tomato paste, 1 medium-sized onion (diced), 3/4 small bay leaves, 11/2 tsp curry powder, 11/2 tsp thyme, 11/2 tsp salt, 2 tsp Knorr powder, 1 tsp smoked paprika, 1 small clove of garlic, 1/4 of thumb of ginger, 3/4 cup chicken stock, 2 cups of rice, a foil to cover the pot of jollof rice so the steam can cook it properly. Garnish : Sliced onions, 1 tbs unsalted butter I used chicken stock for this recipe, feel free to use meat stock.
