Instagram: www.instagram.com/jonosweettreats Ingredients for 6 pcs 1.50 cups (about 200 g) bread flour 2 tablespoons sugar 2 teaspoons instant yeast 1 medium egg 0.45 cup (7 full tablespoons/ about 97 ml) warm milk or water 1/2 teaspoon salt 1.5 tablespoons butter (cold) Sweetened red bean paste Black sesame seeds Egg wash (1 egg plus 1 tablespoon of milk) First rise: 60-90 minutes depending on your room temperature Second rise: 30-40 minutes Bake 350°F (175°C) for 15 minutes 1. Mix the bread flour, sugar, and yeast together with a spatula. Add in the egg and warm milk. Use a spatula to stir the mixtures. 2. Seal tightly and let it rest for 10-20 minutes (optional). This gives the flour enough time to absorb the moisture and make it easier to knead. (Asian buns usually have higher percentage of water content and it is harder to knead than regular bread.) 3. Put on hook attachment in stand mixer and start to mix the mixture for a few minutes. You can also hand knead. 4. Add salt and butter. When all the butter melts, the dough will be a bit “wet”. Continue to knead until the dough is smooth, shiny and springy (elastic), about 20-30 minutes by machine. 5. Take a stretch test. When the dough can stretch without tearing, that means the gluten is well developed and the dough is ready for rising. If the dough tears, knead the dough for a 1-2 minutes and test it again until it is ready. Note: If you are using the bread machine to knead, make sure the dough can pass the “stretch test”. Some bread machines only knead for a short period of time. The problem with that is the dough will not look “pretty” after baking. Sometimes, it will “wrinkle” or “collapse” after baking. 6. Spray oil/ grease inside a bowl. Transfer the dough into the bowl, turning it a few times to make sure it is coated with oil. Seal and place it in warm place to rise for 60-90 minutes or until double in size. 7. Degassing the dough. Punch down the dough to remove the air bubbles and divide it into 6 equal portions. It is recommended to weigh and measure so all portions are equal. 8. Shape each portion into a round shape (dough shaping). Rest the dough for a few minutes so it can relax (optional). Roll the dough and insert the red bean paste. Seal it into a bun. Then, flatten the bun with your palm. Cut then flattened bun into 8 places and twist the cut facing up. (Please see video) 9. Place the buns in a baking pan lined with baking mat/ parchment paper. Cover with a towel to prevent them from drying and let it rest for another 30-40 minutes. 10. Preheat the oven at 350°F (175°C). Brush the top of the buns with egg wash. Top with some black sesame seeds. Bake for 15 minutes. 11. Let it cool down before serving. ADDITIONAL NOTES: 1. Please read the package instruction for the instant yeast. Generally the milk (liquid) should be around 120°F (49°C) to activate the yeast. If it is too hot, the milk will kill the yeast. If it is not warm enough, it will take longer for the bread to rise. 2. Do not expose the salt to the yeast directly in the beginning, it will retard yeast growth. 3.
