There are many types of udon in Japanese supermarkets such as cooked udon, dried udon and frozen udon same like soba noodles. Today, I’m going to make cold udon. When I cook cold udon, I usually use this frozen one. The frozen udon has a good chewy texture. 0:44 start cooking 4:59 tasting ~ Ingredients for 1 serving ~ 1 pack (180g) of frozen udon noodles 1 of egg 5g of ginger Deep-fried tempura batter Green onion （udon sauce） 5 Tbsps of soy sauce 3 Tbsps of mirin 2 Tbsps of sugar 300ml of dashi stock ~Directions~ 1. Make mentsuyu. ( https://youtu.be/ntmvJDzsVXk ) 2. Make onsen tamago or soft boiled egg. Fill water in a pot and boil it. 3. When it comes to boil, turn off the heat and place an egg in the pot. Let stand for 8 minutes. 4. Take an egg to a bowl which is filled with ice water. 5. Peel and grate ginger. 6. Boil water in a pot. Then place udon in it and boil for 1 minutes. 7. Drain hot water and rub and rinse in running water. Put ice cubes in a pot and rinse the noodles. 8. Drain the water using a strainer, and place on a plate. 9. Place tenkasu or deep-fried tempura batter, and green onion. 10. Place grated ginger, and crack a soft boiled egg on it. 11. Pour the mentsuyu or udon sauce. You can see other udon recipes.
