| Video Discription | Air Fryer Baked Sweet Potato in HALF the time! Bookmark/save this post and follow me for more recipes 🥰🌱 Just poke some holes with a fork in the washed and cleaned sweet potato. Rub a little bit of oil and salt all over, then air fry at 390F for 30-35 minutes in the air fryer 😍!! Let it cool slightly, cut open and fluff. Add a pat of butter or load it up like I did. For the filling I do: I just did black beans, onions, garlic, bell peppers and salsa in garlic powder, onion powder, cumin, sea salt and black pepper - sautéed down. Then added a chopped parsley lemon shallot topping on that! Sauté the shallots in a little bit of evoo + sea salt, then add in parsley and generous squeeze of lemon for flavour let it sit like 5 mins OFF heat to reduce then top the sweet potato with it.
