आज मसाला किचन में बन रही हैं कोलकाता की फेमस क्लब कचौरी। न पूरी-न कचौड़ी-न बेड़ई, ये है कोलकाता की फेमस क्लब कचौड़ी | न कचौड़ी की तरह भरना पड़ेगा, न ही फटने का झंझट, 3 स्वाद वाली कचौड़ी बनेगी बिल्कुल फटाफट | मूंग दाल कचौड़ी, सब्ज़ी कचौड़ी, भटूरा रेसिपी, उरद दाल कचौड़ी, बेड़ई रेसिपी, सब्ज़ी बेड़ई, मिनी कचौड़ी, स्ट्रीट फ़ूड, नाश्ता रेसिपी हलवाई जैसी कचौड़ी ज़रूर बनाये और क्लब कचौड़ी रेसिपी शेयर करना न भूले | मसाला किचन | पूनम देवनानी रेसिपी
INGREDIENTS:
* Urad Dal(उड़द की दाल) - 1/2 Bowl
* Ginger(अदरक) - 2 Inch
* Green Chili(हरी मिर्च) - 3-4
* Asafoetida Powder(हींग) - 1/2 Tsp
* White Flour/Maida(मैदा) - 2 Bowl
* Semolina(सूजी/रवा) - 3/4 Bowl
* Salt (नमक) - As Per Taste/1-1.5 Tsp
* Ghee(घी) - 2-3 Tbsp
* Oil(तेल) - For Frying
For Masala:
* Bay Leaf(तेज पत्ता) - 1-2
* Cumin Seeds(जीरा) - 1 Tsp
* Cinnamon Stick(दालचीनी) - 1
* Black/Big Cardamom(काली/बड़ी इलायची) - 1
* Green Cardamom(हरी इलायची) - 1
* Black Pepper(काली मिर्च) - 20 Nos
* Clove(लौंग) - 7-8
* Fennel Powder(सौंफ पाउडर) - 1 Tbsp
For Paste:
* Tomato(टमाटर) - 2 Nos
* Green Chili(हरी मिर्च) - 3-4 Nos
* Ginger(अदरक) - Grated
* Coriander Leaves(धनिया पत्ती) - Some
* Water(पानी) - As Required
For Sabzi:
* Oil(तेल) - 1 Serving Spoon
* Cumin Seeds(जीरा) - 1/2 Tsp
* Asafoetida Powder(हींग) - 1/2 Tsp
* Dried Whole Red Chilli(सूखी साबुत लाल मिर्च) - 4-5
* Coriander Powder(धनिया पाउडर) - 1 Tbsp
* Turmeric Powder(हल्दी पाउडर) - 1/2 Tsp
* Crushed Red Chili Powder(कुटी हुई लाल मिर्च) - 1/2 Tsp
* Roasted Cumin Powder(भुना जीरा पाउडर) - 1/2 Tsp
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Tsp
* Water(पानी) - Some
* Plain Salt(सादा नमक) - As Per Taste
* Black Salt(कालानमक) - As Per Taste
* Sugar(चीनी) - 1/2 Tsp
* Potato(आलू) - 7-8 Nos
* Fenugreek Leaves(कसूरी मेथी) - 1 Tbsp
* Mint Powder(पुदीना पाउडर) - 1/2 Tsp
* Hot Water(गर्म पानी) - 2 Glass
* Dried Mango Powder(अमचूर पाउडर) - Some
* Coriander Leaves(धनिया पत्ती) - Some
For Serving:
* Salad(सलाद)
* Sweet Chutney(मीठी चटनी)
* Namkeen Sev(नमकीन सेव)
* Fried Green Chilli(तली हुई हरी मिर्च)
RECIPE:
For Kachodi, soak some Urad Dal for 4 hours. Then put the soaked Dal in the mixer jar & grind a little. Then add some Ginger, Green Chilli & Asafoetida/Hing Powder. Grind them & make a fine paste & keep it aside. Take a big parat, put some White Flour/Maida, Semolina, Salt To Taste, Ghee & add ground Dal Paste gradually & bind the dough. Apply some Oil, cover with the wet cloth & keep it. Then make a dough ball & roll them. Fry them in the medium heated Oil until they get golden in color.
For Masala, in a mixer jar, put some Bay Leaf, Cumin Seeds, Cinnamon Sticks, Black cardamom, Green Cardamom, Black Pepper, Clove & some Fennel Powder in it. Coarsely grind it & make a powder & take it out on a plate.
For Paste, in the same mixer jar, put roughly chopped Tomato, Green Chilli, Ginger & some Coriander Leaves & grind by adding some Water as required & keep it aside.
For Sabzi, keep the pan on the flame, put some Oil, Cumin Seeds, Asafoetida/Hing Powder, Dried Whole Red Chilli, Coriander Powder, Turmeric Powder, Crushed red Chilli, Roasted Cumin Powder, Kashmiri red Chilli Powder & saute them well by adding a little Water. Then add coarsely ground Masala, ground Tomato Paste, Plain Salt, Black Salt & Sugar & cook. Then put boiled & mashed Potato, Fenugreek Leaves Mint Powder & Hot Water in it. Mix, cover & cook well till it releases the oil. Garnish with Coriander Leaves cook for 1 minute & turn the flame off. Serve the Tasty Sabzi with Club Kachori, Green Salad, Namkeen Sev & Fried Green Chilli.
