| Video Discription | Recipe: Homemade Biscotti recipe Serves: 20-25 Biscotti Ingredients: • 2 large eggs • ½ cup vegetable oil • ¾ cup sugar (some more for sprinkling) • ½ tsp vanilla extract • ½ tsp orange extract • 2½ cup flour (more as needed) • ¼ tsp salt • 1¼ tsp baking powder • 1 tsp grounded cinnamon • 1 cup dried cranberries • 1 cup slivered / chopped almonds Instructions: • Preheat the oven at 350F and prepare a baking tray. • Place the cranberries in a small bowl. Add warm water to it, cover and let it set for some time. • In a bowl add eggs, vegetable oil and sugar. Mix them well. • In the mixture add vanilla extract and orange extract and mix well. Keep it aside. • In a separate bowl add flour, salt, baking powder and grounded cinnamon. Mix well. • In this flour mixture add the egg mixture and mix everything until smooth. • Add almonds and cranberries and mix until everything gets well incorporated and a sticky dough form. • Scrape the dough onto the prepared baking tray (in 2 portions). With slightly damp hands / spatula transform them into a log of 10 inches long, 1 ½ inches tall and 4 inches wide. • Sprinkle sugar over the two logs. • Bake in the preheated oven for 25 minutes. • Transfer the logs to cooling rack. • Once it is cool enough to handle, cut it into ½ inch slices. • Return to the baking tray (in a single layer) and bake for another 20 minutes or until golden brown. • Let them cool completely on a wire rack.
