In today’s video, I am putting a twist on a classic with my recipe for Dairy-Free Butter Chicken made with Becel® Plant Based Bricks #ad
The bricks taste, cook, and bake like butter but are plant-based with 25% less saturated fat which is such a win :D And to tell you the truth, I think I prefer this version to the original. Try the #ButterSwapChallenge for yourself!

INGREDIENTS
For the chicken
1 tbsp, lemon juice
2 tsp, garam masala
1 tsp, cayenne chilli powder
1 tsp, ground coriander
1 tsp, turmeric
½ tsp, salt
1.5 lbs boneless skinless chicken thighs, cut into small chunks
3 tbsp, Becel® Plant Based Bricks (Unsalted)
For the sauce
½ cup Becel® Plant Based Bricks (Unsalted)
2 cups, strained tomato sauce (passata)
1 tbsp, sugar
1 tsp, cayenne chilli powder
2 tbsp, dried fenugreek leaves (kasoori methi)
1 tsp, garam masala
¾ cup, raw cashews
1 cup water
Salt to taste
Add all ingredients for the chicken to a bowl, and mix to coat. Cover bowl and marinate overnight or for a minimum of 1 hour in the fridge.
In a large pot, add 3 tbsp of Becel® Plant Based Bricks and heat on medium-high. Add marinated chicken in batches, ensuring not to crowd the pan, and sear on all sides, creating a deep brown crust. Remove with a slotted spoon and set aside.
Add 1/2 cup of Becel® Plant Based Bricks, strained tomato sauce, sugar, cayenne chilli, 1 tbsp of fenugreek leaves, and garam masala to the same pot. Stir to lift up any brown bits left behind by the chicken.
Continue to cook until tomatoes reduce, thicken, and butter begins to separate along the edges of the pan (approximately 15-20 minutes).
To a blender add cashews and water, and blend until creamy in texture.
Add cashew cream (reserving a few tablespoons), and salt to taste. Return chicken to pan, bringing the mixture to a simmer. Cook for 5 minutes until chicken is cooked through.
Garnish with the remaining dried fenugreek leaves, and a drizzle of cashew cream. Enjoy! :)
