| Video Discription | Jun is a fermented beverage made with organic loose leaf green tea or green tea bags and raw organic unpasteurized honey. It is referred to as the champagne of kombucha because it has a more subtle and refined flavour and is much more lighter tasting than kombucha is. It is also lighter in colour because of the green tea and honey compared to black tea and sugar used in kombucha. How to make a Jun Scobie Ingredients 2 1/2 cups filtered water 6 Green Tea bags or 2 Tablespoons loose leaf green tea 1/3 cup unpasteurized raw organic honey Sterilized jar 2 Coffee filters Rubber band 1/2 to 2/3 cup kombucha starter liquid Method Heat the water to just below boiling point and add tea bags. Allow to steep ten to fifteen minutes, squeeze out the bags and allow the tea to cool. Once at room temperature add the tea to the sterilized jar. Stir in the honey until fully dissolved. Then stir in the kombucha tea. Cover the jar with a double layer of coffee filters. Label the the jar with its contents and date. Store the jar in a dark warm place with temperatures between 20 to 27C. Somewhere midway should be good. Within a week or two you should have a thin scoby forming. Today is the 29 May 2020 and that’s when I took this picture. I left it for a long period of time to make sure I have a mature scoby before making my first Jun brew. I’m certain that the scoby will mature and the bacteria and yeast will be more refined into a Jun scoby after feeding it with Green tea a couple times before brewing my first batch of Jun. Note that if you are doing this in cooler climates it may take more than a couple of weeks, and doing this in summer you may get quicker results. 02 July 2020 Several small scobies formed and I’m brewing my first batch of Jun. I fed it a couple times with organic loose leaf green tea and honey to get the more refined Jun culture started. I am going to use a few of the newer scobies that formed to make my first brew. The first scobie will be allowed to mature in my Jun scobie hotel and I will continue to feed it with organic loose leaf green tea and honey every so often. [VZH5qmyTz1g] |
