Serve it warm with ice cream, butter or salted caramel. Great idea for festive season! Ingredients: 150g butter 375ml (1 ½ cup) milk 200g (1 packed cup) soft brown sugar 240g (3/4 cup) golden syrup 2 tsp vanilla extract 1 tsp baking soda 1 egg 300g (2 cups) self-raising flour 2 tbsp ground ginger 1 tbsp mixed spice 1 tsp ground cinnamon ½ cup chopped crystallised ginger (optional) If you add crystallised ginger it’s better to chop it thinly, otherwise it will sink. Bake in the oven 180C/350F fanbake for about 45 min Tin size: 27cmx11cm If you don't have self-raising flour you can easily make it at home: just add 2 tsp of baking powder into 150g of plain flour.
