This style of Chamorro cooking in the preparation of kelaguen is similar to Latin cooking in the preparation of ceviche - using citrus to cook a variety of proteins like beef, chicken, and shrimp. This beef kelaguen onion salad uses lemon and salt to cook the raw steak. After a good soak in the citrus overnight, the Guam steak kelaguen is ready to eat as a side dish at a fiesta, or even with just white rice or titiyas at home.
