It’s found in everything from grilled meats, baked fish, roast chicken & roasted/ steamed veggies. It can be done in advance & keeps well in fridge for a week or 2. It is optional on how sweet or spicy you like your chimichurri, as our household discovered in having 2 bowls of sweet & spicy chimichurri sauces. 𝐘𝐨𝐮 𝐍𝐞𝐞𝐝: 100g/ large bunch flat-leaf parsley, finely chopped 30g/small bunch fresh oregano, finely chopped 7-10 fat garlic cloves (whole bulb), finely chopped/ crushed 1 round/ banana shallot, finely chopped 1 cup apple cider/ red wine vinegar 1 cup extra virgin olive oil 1 tsp seasalt or to taste 1/2 tsp black pepper O͟p̲t͟i͟o͟n͟a͟l͟: w͟i͟t͟h͟ o͟r͟ w͟i͟t͟h͟o͟u͟t͟ h͟e͟a͟t͟ 1-2 tsp chilli or chilli flakes 1-3 fresh chillies, e.g jalapeño or fiery 🌶️🌶️🌶️ finely chopped 1/2 red bell pepper, finely chopped 🔪 Ensure that all ingredients noted as finely chopped, are extremely finely chopped. It’s best not to use a food processor or blender as you need texture & this comes from the extremely fine chopping. 🥗 In a bowl, add parsley, oregano, garlic, shallot, vinegar, EV olive oil, salt & pepper & mix well. 🌶️ The amount of heat is optional in each family household: some like it extremely 🔥& others prefer it 🆒 so to strike a balance, place either 1/3 or 1/2 of the green sauce in another bowl & choose the 🔥level you want. 🫑 for a cool sauce, add finely chopped red bell pepper & for something more hot, add dried or fresh chillies to the other bowl.
