| Video Discription | We went to a remote, rural town called Barile to discover how the Albanian settlers from several centuries ago still have an influence in the language and cooking of the area. Here Pasqualina and Maria show how to make a delicious 'tumact me tulez' - a tagliatelle pasta dish served with a tomato and anchovy sauce, with a breadcrumb and walnut topping instead of cheese. It's delicious. Big thanks to the Pro Loco of Barile. Here is the list of ingredients for 5 to 6 people: For the sauce - 100g extra virgin olive oil - 2 whole cloves garlic (remove before serving) - 1 whole dried chilli pepper - 160g anchovies - A glass of white wine - 1 tin of tomatoes, 1 bottle of tomato passata - 2 pinches salt - a bunch fresh basil For the dressing: - 200g breadcrumbs - Olive Oil - garlic (optional) - 25g chopped walnuts - 2 tablespoons chopped parsley For the pasta dough - 500g durum wheat finely ground flour - 2 cups of water Editor: Charlie Williams [UYXwuGcOesE] |
