For filling/ मसाला... 1/2 cup dhuli urad dal, soaked for 2 hrs उड़द दाल 1 cup gram flour बेसन 1 tsp black pepper, cloves दरदरी कुटी लौंग, काली मिर्च Salt to taste नमक 2 tsp Red chilli powder लाल मिर्च 1/2 tsp Turmeric powderहल्दी 1 tsp Aniseeds दरदरी कुटी सौंफ 1 tsp Asafoetida हींग 1 tsp chilli flakes 1 tsp Coriander कुटा हुआ धनिया 2 serving spoon Vegetable oil तेल 1/2 cup water Method... Take nonstick kadhai, Add oil , then dal and cook for a min. Now add besan & mix, then add all spices and mix well. Now add 1/2 cup water and cover it, Cook 8 min on low flame. Continue mix with spatula, Now cook again for 8 min without lid. Cool it and make balls. Kachori making.... Make the dough smooth, divided into equal portions. Take one of them, Spread , Place one ball in center, and close it, then Press with palm. like this make all kachoris. Now Heat oil in kadhai, When the oil is just hot enough, you can add the kachoris. When the kachori start puffing up, then gently nudge each kachori with a spoon, so that they puff up well. When the base becomes light golden, then gently turn them over. The frying takes about 15 minutes. So one has to be patient. Regulate the temperature from low to low-medium as required. Fry the kachori till they become golden and nicely crisp from outside. Serve khasta kachori warm accompanied with some green/red chutney.
