Add 1/4 cup of olive oil (*make sure the entire pyrex is coated in olive oil with a little on the Bottom, so use as much as you need). Mix well and cook for 20-30 minutes or until the tomatoes are roasted and the garlic is soft. * In a cast iron skillet add a little olive oil, and lightly toast the ciabatta rolls (cut in half.) * To build the sandwich: * Remove 4-5 cloves of the roasted garlic and smash onto the top side of the toasted ciabatta bread. * On the other side add 1 tbsp of the Chipotle Mayo on the bottom piece of the ciabatta bread. * On the bottom add 3oz (or more if desired) of the Chorizo cantimpalo and 3oz of the salchichon. * Top with Micro Greens, then smash your Burrata ball on top so that the ball breaks and starts to spread all through the spicy micro greens. * On the top piece, add about 2 tbsp of the roasted cherry tomato and garlic. * Cut in half and devour. *Always Serve Hot! *If you want to make it extra juicy, pour some of the olive oil from the roasted tomatoes pyrex.
