| Video Discription | Today here we bring you the original paella recipe. As you may know, this dish was created in Valencia, Spain and there are many different types, however the original one contains ingredients from the Albufera in Valencia. Remember, not because a dish contains rice it means that it can be called paella. !!! Please note that depending on the type of short-grain rice, you will need different quantities of chicken stock. Bomba rice is the most typical rice in Valencia and it needs more stock. In this video, we have used a regular short-grain rice, which need less stock than the Bomba rice. Recipe here: Servings 2-3 INGREDIENTS Short-grain rice 1/3 LB - 150 gr Chicken 1/3 LB - 150 gr Rabbit 1/3 LB - 150 gr (if you do not like it, use more chicken) Chicken stock 1/4 LB - 1 Liter Flat beans 1/4 LB - 100gr Garrofón 1/4 LB - 150 gr (this is a typical legume from Valencia, if you do not find them, use any other bean that cooks in 20 minutes or use no beans) Crushed tomato 1 Crushed garlic 2 cloves Sweet Pimentón 1 teaspoon Saffron a pinch Rosemary a pinch Olive oil Salt PREPARATION 1. Add a pinch of salt and olive oil to the "paellera" (typical pan for cooking paella) 2. Add the meat, add another pinch of salt over the meat and cook it until golden brown. 3. Add the flat beans and cook them for 5 minutes. 4. Add the garrofón and the crushed garlic. Give it a stir. 5. Add the sweet pimentón and stir for a few seconds (10-15 seconds), we do not want to get it burnt. 6. Add the crushed tomato, stir and cook for 10 minutes. 7. Add the chicken stock and bring it to a boil. 8. Add the saffron and a pinch of rosemary and let it cook over medium-high heat for 10 minutes. 9. Add the rice and let it cook over high heat for 10 minutes. 10. Lower the heat and let it cook for 10 minutes. 11. Then cover the pan and let it rest for 10 minutes. 12. Serve. 13. Enjoy!
