They either use it raw to sweeten drinks or work the paste to turn it into a golden-coloured sweet called melcocha. But making it requires a lot of patience... and love! Lorena Guillen is a big fan of panela and never gets tired of it. At 29 years old, she has always worked alongside her father in the family farm. Every day, they harvest 400 kilos of sugar cane... and all is done by hands! She wants to continue the tradition by planting and harvesting the sugar cane the way her father and grandfather did.
