| Video Discription | Biriyani . For masala —————— Onion - 1 kg Beef - 1 kg Tomato - 5 Green chilli crushed - 12 to 14 Garlic - 1 (big) Ginger - 2 inch piece . Curry leaves - 2 sprigs . Turmeric powder - 1/4 tspn Garam masala - 1 to 2 tspn Oil - 2 tblspn Salt - as per taste. Mix everything with hand and pressure cook until the beef is cooked ( on high flame for 1 whistle then on sim for 20 min). No need to add any water . Once it’s cooked . Take out the extra water and keep it aside . Add coriander leaves and mix the masala . For Rice : ——————- Biriyani rice (khaima) - 1 1/2 kg. Onion (to fry) - 3 Ghee - 2 tblspn Oil - 3/4 cup. Lemon juice - 1 tblspn Cashew and raisins. Water ratio- 1.5 cup water for 1 cup Rice Whole spices. Wash and drain the rice . Add ghee and oil in a pot . Fry cashew and kismis. Keep it aside. Fry onion . Keep it aside . Add whole spices and rice in the oil and roast for 5-8 min . Add salt . Add boiling water and beef cooked (reserved water) and lemon juice . Let it cook until the rice is done . Add half of the fried onions into beef masala and mix well. Now layer the rice on top of beef masala . Take juice of one lemon. Add a pinch of yellow food colour. And layer the rice as seen in the video . Keep the pot on low flame covered for 10 min. Turn off the flame and open the pot after 20 min. Delicious Thalassery beef dum biriyani is ready .
