| Video Discription | Khasta Kachori is one of the most famous snacks that Northern India has on offer. With its origin in Rajasthan, today every part of India has Khasta Kachori's own local variation, and interestingly all of them are equally tantalizing. But, we have chosen to stick to its authentic Rajasthani form. A perfect Khasta Kachori is one that is puffed up and flaky on the outside but hollow on the inside as the filling stick to the crust. Khasta actually means 'flaky' and this flaky Kachori is filled with a delectable spicy moong dal mixture. It teases our senses with a balanced flavour of spices, sweetness and tanginess. Ingredients (For 9-10 Kachoris) For the dough : All-Purpose Flour (Maida) - 2 cups Salt - 1/2 teaspoon Carom Seeds (Ajwain) - 1/2 teaspoon Ghee (Clarified Butter) - 1/4 cup Water - As needed For the stuffing : Soaked and Drained Moong Dal - 1/2 cup Gram flour (Besan) - 4 tbsp Coriander Seeds - 1 tbsp Fennel seeds- 1 tbsp Black salt- 1/2 teaspoon White salt- 1/2 teaspoon Red Chilli powder - 1 tbsp Turmeric- 1/2 teaspoon Coriander powder - 1 tbsp Garam masala - 1 tbsp Dry Mango powder (Aamchur) - 1 tbsp Sugar - 1 teaspoon Dry Fenugreek leaves (Kasoori Methi) - 1 tbsp Asafoetida (Hing) - 1/2 teaspoon Crushed Black pepper- 1 teaspoon Grated Ginger and Green chilli- 1 tbsp Refined Oil - As needed For the frying : Refined Oil - As needed [WBA_mtkbdco] |
