Resep Siomay Ayam Jamur (15 pcs)
Bahan:
300 gr paha ayam giling
2 sdm gula pasir
½ sdm garam
¼ sdt merica
¼ sdt kaldu jamur / penyedap
80 gr tepung tapioka
2 sdm tepung terigu protein sedang
60 gr jamur shitake
60 gr jamur champignon
2 batang daun bawang
2 siung bawang putih
60 ml minyak
1 butir putih telur
2 sdt saus tiram
1 sdt minyak wijen
2 sdt kecap asin
2 sdt kecap ikan
2 sdm air dingin

Saus cocolan:
1 sdm saus tomat
1 sdm saus sambal
1 sdm air
Langkah:
1. Cincang bawang putih, daun bawang, shitake, dan champignon kemudian tumis sesaat hingga matang, sisihkan
2. Di dalam mangkuk, campurkan ayam giling, garam, gula pasir, kaldu jamur, dan merica, aduk hingga lengket
3. Masukkan kecap asin, saus tiram, minyak wijen, kecap ikan, putih telur, tumisan jamur, tapioka, dan tepung terigu, aduk rata
4. Tambahkan sedikit air, aduk rata. Diamkan di dalam kulkas minimal 2 jam
5. Siapkan kulit dimsum diameter 9 cm, letakkan adonan siomay lalu bungkus.
6. Oles dasar wadah kukusan dengan minyak lalu kukus siomay selama 20 menit
7. Untuk saus cocolan, campurkan semua bahan lalu aduk rata
8. Siomay ayam jamur siap disajikan

Chicken Mushroom Shumai Recipe (yield 15 pcs)
Ingredients:
300 g ground chicken thigh
2 tbsp sugar
½ tbsp salt
¼ tsp pepper
¼ tsp mushroom powder / MSG
80 g tapioca flour
2 tbsp all-purpose flour
60 g Shiitake
60 g Champignon
2 pc green onion
2 clove garlic
60 ml oil
1 pc egg white
2 tsp oyster sauce
1 tsp sesame oil
2 tsp soy sauce
2 tsp fish sauce
2 tbsp cold water

Dipping Sauce:
1 tbsp ketchup
1 tbsp chili sauce
1 tbsp water
Steps:
1. Chop the garlic, green onions, Shiitake, and Champignon. Sauté for a moment until cooked. Set aside.
2. In a bowl, combine ground chicken, salt, sugar, mushroom powder, and pepper. Stir until sticky.
3. Add soy sauce, oyster sauce, sesame oil, fish sauce, egg white, sautéed mushroom, tapioca flour, and all-purpose flour. Mix well.
4. Add a bit of water. Mix well, then rest in the fridge for at least 2 hours.
5. Prepare the dim sum skin with a 9-cm diameter. Place the dough on the skin and wrap it.
6. Brush the bottom of the steamer with oil, then steam the Shumai for 20 minutes.
7. For the dipping sauce, combine all ingredients and mix well.
8. Chicken Mushroom Shumai is ready to serve.
