Siomay di Indonesia banyak variasinya, mulai dari isian ayam, ikan, udang, dll. Kali ini aku akan membuat siomay goreng tanpa isian daging dan dilapisi kulit pangsit. Pastinya renyah, gurih, dan cocok untuk camilan keluarga di rumah. Resep Siomay Goreng Dos (24 pcs) Adonan siomay dos: 150 gr tepung terigu protein sedang 50 gr tepung beras 500 ml air 40 ml minyak panas 3 siung bawang putih, parut 1 batang daun bawang, iris 2 sdm saus tiram 3 sdm kecap ikan 1 sdt garam 1 sdm gula ½ sdt merica 2 sdt kaldu bubuk / penyedap 1 butir putih telur 100 gr tepung sagu Kulit pangsit goreng Sambal cocol: 4 siung bawang putih 15 buah cabai rawit merah 2 buah cabai merah 4-5 sdm cuka 3 sdm gula 200 ml air Garam Kaldu bubuk / penyedap Langkah: 1. Masak air, tepung beras, dan tepung protein sedang sambil terus diaduk hingga membentuk adonan kemudian biarkan dingin 2. Siram daun bawang dengan minyak panas, tambahkan bawang putih lalu aduk rata 3. Masukkan kecap ikan, saus tiram, garam, gula, merica, dan kaldu bubuk / penyedap kemudian aduk rata 4. Masukkan putih telur dan tepung sagu, aduk 5. Setelah adonan tepung sudah dingin, campurkan ke dalam adonan tadi hingga tercampur rata 6. Siapkan kulit pangsit, ambil 1 ½ sdm adonan kemudian ratakan di seluruh permukaannya lalu tekuk menggunakan kedua tangan, lakukan hingga adonan habis 7. Siapkan minyak panas, goreng siomay hingga kuning-keemasan menggunakan api sedang-kecil 8. Untuk sambal cocol, blender bawang putih, setengah cabai rawit, dan air hingga halus 9. Masukkan sisa cabai rawit dan cabai merah, blender kasar 10. tambahkan cuka dan gula lalu masak sambal hingga air berkurang dan matang kemudian koreksi rasa 11. Cook the water, rice flour, and all-purpose flour. Keep stirring until the dough comes together. Set aside to cool. 2. Pour hot oil onto the green onions. Add the garlic in and mix well. 3. Add the fish sauce, oyster sauce, salt, sugar, pepper, and stock powder / flavor enhancer. Mix well. 4. Add the egg whites and sago flour in. Mix well. 5. After the cooked flour cools down, mix with the green onion mix evenly. 6. Prepare the wonton wrappers. Fill with 1.5 tbsp of dough and spread it evenly. Fold with both hands and repeat until the dough is finished. 7. Prepare hot oil and fry the Shumai on medium-low heat until golden brown. 8. For the Dipping Sambal, blend the garlic, half of the bird’s eye chili, and water until smooth. 9. Add the rest of the bird’s eye chili and red chili. Blend roughly. 10. Add the vinegar and sugar, then cook the Sambal until the water is reduced. Season if needed. 11.
