Banyak first timer yg pertama kali bikin roti, langsung berhasil rotinya.
Walaupun resep uda pernah saya post di Instagram, Highlight.
Sy post disini supaya bisa di rebake oleh lebih banyak org lagi.
Resep ini bisa dibuat jadi banyak jenis roti.
Bukan hanya roti sobek, tawar, sisir, cinnamon roll, mexico bun, melon pan, roti bulat polos, donat, korean garlic cheese bread, burger bun, roti apapun bisa ya moms.
RESEP:
PreFerment:
-350gr tepung terigu protein tinggi
-10gr gula pasir (campur ke tepung terigu)
-200ml air suhu ruangan
-6gr yeast/ragi (aduk ke air)
Preferment bisa simpan dikulkas sampai 4-5hari
Main Dough:
-150gr tepung terigu protein tinggi
-60gr gula (bole ditambah 50-100gr utk roti manis)
-5gr garam
-110ml campuran telur 1butir + susu cair tawar
(misalnya 1 butir telur (putih dan kuning di mix) 50ml, tambahkan susu cair 60ml, total 110ml)
-20gr susu bubuk
-60gr unsalted butter (bole ganti margarin)
Buttermilk Filling:
-120gr unsalted butter (suhu ruangan)
-40gr gula tepung (icing sugar)
-45gr telur (putih dan kuning dicampur, timbang 45gr)
-2gr garam
-20ml susu kental manis
-1/2sdt vanilla extract
-200gr susu bubuk MILKY MELT / milk powder

bole diganti susuk bubuk anak2 kalo tdk ada, tapi hasilnya ga bs melting.
Rekomen 30gr isi filling buttermilk yrk setiap 30-40gr adonan soft bread
Buttermilk kalo terlalu sdikit, ga akan bs melted.
Panggang suhu 190c api atas bawah selama 15-20menit, sesuaikan dgn oven masing2.
Loyangku ukuran 18x25cm
Untuk 1/2 resep, bahan dibagi 2 smua.
Jangan overbake utk mendapapatkan hasil yg melted.
Kalo bake kelamaan, buttermilk jadi makin kering.

Recipe in english:
The softest and most delicious bread ever.
I myself, have experimented and baked lots of bread recipe.
Out of all of those recipes, THIS IS MY FAVORITE.
Its easy to make with step by step detailed video.
It stay soft up to 3days in room temperature.
And it has a characteristic fragrant, result of prefermented dough that i crave for.
This bread dough can be a little sticky, dust with some flour to help with shaping.
It can be made to various breads, like toast loaf, cinnamon roll, pizza, donut, bomboloni, cheese bread, mexico bun, melon pan, any kind of bread u could think of.
Pre-ferment dough:
350gr bread flour
215gr water (200ml)
6gr yeast (was 4gr yeast, i've updated it to 6gr)
Mix well and leave to proof 1 hr on kitchen counter
Leave in fridge overnight
Main dough:
All of pre ferment dough
150gr bread flour
60gr sugar (may add more according to preference)
5gr salt
110ml hydration of egg and milk (1 whole egg+ milk = 110ml)
20gr milk powder
60gr unsalted butter
Buttermilk filling:
120gr soften unsalted butter (not melted)
40gr icing sugar (sift)
2gr salt
20ml sweet condensed milk
45gr beaten egg
1/2 tsp vanilla extract
200gr Milky Melt baking milk powder (can substitute with children milk powder but wont get melted texture)
Bake 190c, top and bottom heat, no fan 15-20mins (adjust accordingly with own oven, results may varies)
Dont over bake to achieve melted buttermilk filling.
It tends to dries up when baked too long.
Recommended to use 30gr of buttermilk filling for every 30-40gr dough (1:1 comparison)
Devide the recipe to half for 1/2 recipes
