| Video Discription | Charred and rendered beef fat is the best bite of a steak. Smokey and packed with flavor, it melts in your mouth. This is very different from the thick layer of fat separating the eye and the cap of a rib roast. While edible, it’s trapped inside the roast during the cooking process and therefore never exposed to high or direct heat. Beef fat only starts to break down around 130F, so at medium rare, this knob of fat can’t sufficiently render. Prime rib should already have great marbling, and I find that this non rendered blubber is unnecessary. To maintain it’s original shape/appearance, I re-added blue cheese and beef bacon. If you don’t like blue cheese, feta or goat would be great alternatives. I smoked this prime rib at 250F for about 3.5 hours and pulled at 120F internal. You should expect ~13 degrees F of carryover when cooked at this temp.
