Step 2: Wash eggplant and squeeze dry. Once dried beat an egg. Mix eggplant with egg then flour. Slice Onion. Step 3: Lightly fry both eggplant and onion separately. Once finished mix the two in a pan and add sauce. Cook together with sauce and top with a handful of grated parmigiano.
