ΥΛΙΚΑ ΓΙΑ ΤΗΝ ΚΡΕΜΑ: 1 μεγάλο κουτί γάλα εβαπορέ (410 γρ./382 ml) 1 κουτί (του εβαπορέ) νερό (410 γρ.) 9 κ.σ. ζάχαρη (200 γρ.) 6 κ.σ. κάστερ πάουντερ (100 γρ.) 1 φλυτζάνι νερό (200 ml) μέσα στο οποίο διαλύουμε το κάστερ πάουντερ 250 γρ. τεμαχισμένη κουβερτούρα 3/4 βουτύρου των 250 γρ. (188 γρ.) 2 πακέτα πτι μπερ Παπαδοπούλου (450 γρ.) σπασμένα ΥΛΙΚΑ ΓΙΑ ΤΗ ΣΑΝΤΙΓΥ: 1 κρύο τενεκεδάκι σαντιγύ Morfat 3/4 κούπας ζάχαρη (150 γρ.) ΓΙΑ ΠΑΣΠΑΛΙΣΜΑ: 50 γρ. τρίμματα κουβερτούρας ΕΚΤΕΛΕΣΗ: 1 - Σε μεγάλη κατσαρόλα βάζω το γάλα, το νερό και τη ζάχαρη και ανακατεύω σε δυνατή φωτιά να διαλυθεί η ζάχαρη. 2 - Όταν ζεσταθεί το μείγμα, προσθέτω το κάστερ πάουντερ διαλυμένο στο νερό. Χαμηλώνω το μάτι στο μισό και ανακατεύω συνεχώς μέχρι να πήξει η κρέμα. 3 - Όταν πήξει η κρέμα, τραβώ από τη φωτιά και προσθέτω αμέσως την κουβερτούρα και το βούτυρο. Τα βυθίζω στην κρέμα και περιμένω 2 λεπτά. Αφού περάσουν τα 2 λεπτά, ανακατεύω να ομογενοποιηθούν. 4 - Ρίχνω τα μπισκότα στην κρέμα και ανακατεύω να καλυφθούν τελείως από την κρέμα. 5 - Αδειάζω το μείγμα σε σκεύος 35 x 22 εκ, απλώνω ομοιόμορφα και ισιώνω την επιφάνεια. Βάζω το γλυκό στο ψυγείο 1 - 2 ώρες να κρυώσει τελείως. 6 - Ετοιμάζω τη σαντιγύ. Χτυπώ τη Morfat σε σαντιγύ. Μετά από 3 λεπτά χτυπήματος, προσθέτω τη ζάχαρη σε 2 δόσεις και χτυπώ για 4 - 5 λεπτά ακόμα. 7 - Απλώνω ομοιόμορφα τη σαντιγύ επάνω από το κρύο γλυκό και ισιώνω την επιφάνειά της. Πασπαλίζω με τα τρίμματα κουβερτούρας και βάζω στο ψυγείο για 1 - 2 ώρες.
