Rub in firmly and squeeze out the water to remove the scum. Rinse with water and squeeze well. 【3】Cut cucumber in half lengthwise, then cut diagonally into 5mm pieces. Cut myoga in half lengthwise and slice lengthwise. Measure the vegetables to make 500g. 【4】Place coarse salt, vegetables, red shiso, coarse salt, vegetables, and red shiso in a zipper storage bag.in that order. Place the bag on a bat and weigh down with a 1.5 kg weight. Place a 1.5kg weight on top of the bag and leave at room temperature. 【5】Remove the air and leave for 2 weeks.
