| Video Discription | #백종원 #감자탕 #한식 *시간 오래 걸림 주의* 뜨끈하고 진~한 감자탕! 등뼈대신 뒷다릿살로 끓여보았습니다. 저는 저희 회사에서 만든 '백석된장'을 이용했고, 팀원분들도 진~한 재래식 된장을 사용하시는 걸 추천드려요 감자탕 필수템 '겨자소스'만드는 방법도 알려드릴게요 ========================== [ 감자탕 ] 3인분 기준 [ 재료 ] *양념장 된장 4와 1/2큰술(60g) 고추장 1큰술(20g) 굵은 고춧가루 3큰술(24g) 간마늘 2와 1/2큰술(50g) 소고기다시다 1큰술(10g) MSG 약 1/2큰술(5g) *감자탕 물 약 17컵(3L) 돼지고기 뒷다리살 600g 감자 2개(360g) 대파 3개(300g) 양파 1/2개(125g) 깻잎 20장(40g) 들깻가루 약 4큰술(30g) 청양고추 3개(30g) 후춧가루 약간 *겨자소스 비율 진간장 : 물 : 식초 : 황설탕 = 1 : 1 : 0.3 : 0.3 연겨자 개인 취향에 맞게 [ 감자탕 만드는 법 ] 1. 돼지고기 뒷다리살은 두께 4~5cm 정도의 덩어리로 잘라 흐르는 물에 씻어 준비한다. *돼지 등뼈는 흐르는 물에 잘 씻어 한 번 삶은 뒤 씻어서 준비한다.. 2. 냄비에 돼지고기 뒷다리살을 넣고 물을 충분히 넣어준다. 3. 불을 켜고 된장을 풀어 넣어준 후, 중불에서 약 1시간 20분 정도 끓여준다. 4. 양파를 1cm 두께로 채 썰고, 대파는 길게 반 갈라 6cm 정도 길이로 잘라 준비한다. 5. 청양고추는 두께 0.3cm로 어슷 썰고, 깻잎은 두께 2cm로 썰어서 준비한다. 6. 감자는 크기에 따라 2등분 or 4등분으로 잘라 준비한다. 7. 고기를 충분히 삶아준 뒤, 감자를 먼저 넣어준다. 8. 굵은 고춧가루, 고추장, 간 마늘, 들깻가루, 소고기 다시다, MSG를 넣어준다. 9. 양파, 대파를 넣어주고 20분 정도 더 끓여준다. *대파 파란 부분은 일부 남겨놓고 마지막 고명용으로 사용하면 좋다. 10. 20분 끓여준 후, 전골 냄비에 옮겨 대파 파란 부분, 청양고추, 깻잎을 올리고 마무리로 후춧가루를 뿌린 후, 부르스타에 올려 끓이면서 먹는다. [ 겨자소스 만드는 법 ] 1. 소스 볼에 진간장, 물, 식초, 황설탕, 연겨자를 넣고 잘 섞어준다. [ Gamjatang ] 3 servings [ Ingredients ] *Seasoning sauce 4 1/2 tbsp (60g) doenjang 1 tbsp (20g) gochujang 3 tbsp (24g) coarse red chili pepper powder 2 1/2 tbsp (50g) minced garlic 1 tbsp (10g) beef dashida about 1/2 tbsp (5g) MSG *Gamjatang about 17 cups (3L) water 600g pork hind leg 2 (360g) potatoes 3 (300g) stalks green onion 1/2 (125g) onion 20 (40g) perilla leaves about 4 tbsp (30g) perilla seed powder 3 (30g) Cheongyang peppers some ground black pepper *Ratio for the mustard sauce Thick soy sauce : water : vinegar : brown sugar = 1 : 1 : 0.3 : 0.3 Light mustard to your liking [ Directions for the gamjatang ] 1. Chop the pork hind leg to chunks 4-5cm thick and wash under running water. *If you are using pork backbone, wash it first, boil it, then wash it again. 2. Place the pork hind leg chunks in a pot and completely submerge them in water. 3. Turn the heat on and stir in doenjang. Boil for about an hour and 20 minutes over medium heat. 4. Julienne the onion to pieces 1cm thick. Horizontally slice the green onion in half, and chop them to pieces 6cm long. 5. Diagonally chop the Cheongyang pepper to pieces 0.3cm thick. Chop the perilla leaves to pieces 2cm thick. 6. Chop the potatoes in half or in quarters, depending on the size of the potatoes. 7. When the meat is thoroughly cooked, add the potatoes in first. 8. Then, add the coarse red chili pepper powder, gochujang, minced garlic, perilla seed powder, beef dashida, and MSG. 9. Add the onion and green onion and boil for another 20 minutes. *Save some of the green parts of the green onion to use for garnish later. 10. After boiling for 20 minutes, pour the stew into a stew pot, and garnish with the green parts of the green onion, Cheongyang pepper, and perilla leaves. Season with ground black pepper, and enjoy it directly over a portable burner. [ Directions for the mustard sauce ] 1.
