| Video Discription | #백종원 #스테이크 #뒷다릿살 오늘은 제가 좋아하는 한돈 뒷다릿살로 그럴듯한 스테이크를 만들어 볼게요! ======================== [ 돼지고기뒷다리살스테이크 ] 2인분 기준 [ 재료 ] *돼지고기 밑간 돼지고기 뒷다리살(2cm) 1덩어리(약 540g) 맛소금 약 1/4큰술(4g) 후춧가루 약간 식용유 3큰술(21g) *돼지고기뒷다리살스테이크 밑간 한 돼지고기 전량 새송이버섯 1개(95g) 양파 약 1/4개(63g) 마늘 6개(30g) 정수물 2/3컵(120g) 케첩 3큰술(60g) 식용유 4큰술(28g) 황설탕 2큰술(24g) 버터 약 2큰술(22g) 진간장 2큰술(20g) 통후춧가루 약간 파슬리가루 약간 *달걀프라이 달걀 1개 식용유 약간 [ 만드는 법 ] *돼지고기 밑간 1. 칼끝을 이용하여 돼지고기 근막을 끊어 준비한다. *칼집을 너무 많이 넣을 경우 고기가 찢어질 수 있으니 주의한다. 2. 돼지고기 앞·뒷면에 골고루 맛소금, 후춧가루를 뿌린다. 3. 비닐봉지에 밑간한 돼지고기를 넣고 식용유를 넣은 후 골고루 문질러 10분간 재운다. *돼지고기뒷다리살스테이크 1. 마늘은 꼭지를 제거하고 양파는 사방 2-3cm로 깍뚝썰기 하거나 두께 1cm 원형모양으로 자른다. 2. 새송이버섯은 길게 3등분하여 준비한다. 3. 프라이팬에 식용유를 넣고 강불에 올린 후 연기가 나기 시작하면 밑간한 고기를 올린다. *뚜껑이 없다면 키친타올을 이용하여 덮는다. 4. 팬을 흔들어서 기름이 골고루 들어가게 해준 후 기름이 튀지 않을 정도만 뚜껑을 덮고 약 2분간 익힌다. 5. 돼지고기가 노릇하게 익으면 뒤집은 후 중불로 줄이고 기름이 있는 쪽에 마늘, 양파를 올려 굽는다. 6. 양쪽 면이 노릇하게 구워지면 기름을 2큰술만 남기고 따라낸 후 고기를 팬 한쪽으로 밀어두고 빈공간에 황설탕, 버터를 넣는다. 7. 버터와 황설탕이 녹으면 진간장, 케첩을 넣고 골고루 섞는다. 8. 물을 넣고 잘 섞은 후 새송이버섯을 넣고 약 3분 정도 소스가 걸쭉해질 때까지 졸인다. *화력에 따라 소스 졸이는 시간을 조절한다. 9. 3분 뒤 돼지고기를 접시에 먼저 담고 소스를 1분 정도 더 졸인다. 10. 새로운 프라이팬에 식용유를 넉넉히 두른 후 튀기듯이 반숙 달걀프라이를 한다. 11. 돼지고기 위에 달걀프라이를 올리고 옆에 마늘, 새송이버섯, 양파를 담은 후 소스를 전체적으로 뿌린다. 12. 스테이크 위에 통후춧가루, 파슬리를 뿌려 완성한다. [ Pork hind leg steak ] makes 2 servings [ Ingredients ] *Seasoning the pork 1 chunk (about 540g) pork hind leg (2cm) about 1/4 tbsp (4g) flavored salt some black pepper powder 3 tbsp (21g) cooking oil *Pork hind leg steak all of the seasoned pork 1 (95g) king oyster mushroom 6 (30g) garlic 2/3 cup (120g) filtered water 3 tbsp (60g) ketchup 4 tbsp (28g) cooking oil 2 tbsp (24g) light brown sugar about 2 tbsp (22g) butter 2 tbsp (20g) dark soy sauce some ground black pepper some parsley flakes [ Directions ] *Seasoning the pork 1. Using the tip of a knife, make cuts on the pork fascia. *Be careful not to make too many cuts as the meat may tear apart. 2. Sprinkle flavored salt and black pepper powder evenly on both sides of the pork. 3. Place the seasoned pork and cooking oil in a plastic bag. Rub thoroughly and let it sit for about 10 minutes. *Pork hind leg steak 1. Remove the stem of the garlic and chop the onion into pieces 2-3cm all over, or into 1cm-thick circular pieces. 2. Slice the king oyster mushroom vertically into thirds. 3. In a frying pan, heat the cooking oil over high heat. Once the oil is about to steam, add the seasoned meat. 4. Shake the pan so the oil evenly covers the meat. Partially cover with a lid just so the oil does not splatter. *If your pan does not have a lid, use a kitchen towel to cover the pan. 5. When the pork turns golden brown, flip it over and reduce to medium heat. Then, add the garlic and onion on the side with oil and continue cooking. 6. Once both sides of the meat has turned golden brown, pour out all but 2 tablespoons of oil. Push the meat to one side of the pan and add light brown sugar and butter in the empty space. 7. Once the butter and light brown sugar melt, stir in the dark soy sauce and ketchup. 8. Add water and stir thoroughly. Then, add the king oyster mushroom and simmer for about 3 minutes until the sauce thickens. *Adjust the simmering time depending on the strength of the fire. 9. After 3 minutes, plate the pork first, and simmer the sauce for another minute. 10. In another frying pan, add a generous amount of cooking oil and make a sunny-side-up egg in a deep-frying fashion. 11. Place the fried egg on top of the steak and the garlic, king oyster mushroom, and onion on the side. Then, pour the sauce over the steak. 12.
