| Video Discription | #백종원 #치즈등갈비 #바베큐폭립 특별한 날 만들어 다 같이 먹으면 더 좋은 치즈등갈비 혼자 먹기엔 너무 아까운 요리예요 포인트는 쭈-욱 늘어나는 치즈! 많이 넣을수록 그럴싸하니 절대 아끼지 마세요 다음엔 제가 정말 좋아하는 등갈비튀김 알려드릴게요😏 ======================================= [ 치즈등갈비 ] [ 재료 ] 물(등갈비 초벌용) 8컵(약 1.4L) 물(조림용) 6컵(약 1L) 등갈비 약 15개(900g) 모짜렐라 치즈 2봉지(200g) 양파 1/2개(125g) 떡볶이떡 약 2/3컵(100g) 물엿 약 1/3컵(70g) 맛술 1/3컵(60g) 진간장 약 1/3컵(54g) 대파 1/2대(50g) 황설탕 약 2큰술(20g) 간 마늘 1큰술(20g) 고운 고춧가루 3큰술(18g) 후춧가루 약간 [ 만드는 법 ] 1. 등갈비는 약 1시간 30분 정도 흐르는 물에 핏물을 제거하여 준비한다. * 핏물 제거 시 등갈비를 위아래 섞어서 핏물이 고이지 않도록 중간에 2~3번 물을 갈아준다. * 시간이 부족해 핏물 제거를 하지 못한다면 물에 헹궈내 뼛가루를 제거한다. 2. 깊은 프라이팬이나 냄비에 초벌용 물을 넣고 끓인다. * 등갈비를 삶을 때 대파, 양파, 월계수잎을 넣어주면 잡내를 잡을 때 좋다. 3. 물이 끓어오르면 등갈비를 넣고 약 7~10분 정도 삶는다. 4. 삶은 등갈비는 채반에 밭쳐 건져낸 후 흐르는 물에 헹궈 굳은 피와 이물질을 제거하여 준비한다. 5. 고명용 대파는 두께 0.3cm로 송송 썰고, 양념에 들어가는 대파는 두께 0.5cm로 송송 썰어 준비한다. 6. 양파는 두께 0.5cm로 채 썰어 준비한다. 7. 깨끗한 냄비에 삶은 등갈비, 조림용 물, 황설탕, 물엿, 맛술을 넣고 강불에 끓인 후 끓어오르면 약 5분 정도 더 끓인다. 8. 양파, 대파 양념용, 고운 고춧가루, 간 마늘, 진간장을 넣고 약 30분 끓인다. * 고운 고춧가루는 매운 고춧가루를 사용해도 좋다. 9. 떡을 넣고 약 5분간 끓여 떡이 말랑말랑해지면 불을 끈다. 10. 완성 냄비에 등갈비와 양념장을 모두 옮겨 담은 후 모차렐라 치즈와 고명용 대파, 후춧가루를 골고루 뿌린다. 11. 뚜껑을 덮고 약불에 올려 치즈가 완전히 녹을 때 까지 약 3분 정도 끓여 완성한다. * 밑바닥이 탈 수 있으니 화력에 따라 시간을 조절한다. [ Spicy cheese back ribs ] [ Ingredients ] 8 cups (about 1.4L) water (to parboil back ribs) 6 cups (about 1L) water (to boil down back ribs) about 15 (900g) back ribs 2 bags (200g) mozzarella cheese 1/2 (125g) onion about 2/3 cup (100g) tteok for tteokbokki about 1/3 cup (70g) starch syrup 1/3 cup (60g) cooking wine about 1/3 cup (54g) dark soy sauce 1/2 stalk (50g) green onion about 2 tbsp (20g) brown sugar 1 tbsp (20g) minced garlic 3 tbsp (18g) fine red chili pepper powder some ground pepper [ Directions ] 1. Soak the back ribs in water for about an hour and half to remove blood. * Replace the water 2 to 3 times so that the blood does not dwell in the water for too long. * If you do not have time to remove the blood, rinse the ribs to remove any bone particles. 2. In a deep frying pan or pot, add the water to parboil the ribs and bring it to a boil. * You can also add green onions, onions, and bay leaves to remove the smell of the meat. 3. Once the water comes to a boil, add the back ribs and cook for about 7-10 minutes. 4. Scoop out the parboiled back ribs and rinse under running water to remove the blood curds. 5. Chop the green onion for garnish to pieces 0.3cm thick, and chop the green onion for the sauce to pieces 0.5cm thick. 6. Julienne the onion to pieces 0.5cm thick. 7. In a clean pot, add the parboiled back ribs, water to boil down the ribs, brown sugar, starch syrup, and cooking wine and bring to a boil over high heat. Add tteok and cook for about 5 minutes until the tteok is soft. Then, turn off the heat. 10. Move the back ribs and sauce into a pot for serving. Sprinkle mozzarella cheese, green onions for garnish, and some ground pepper on top. 11.
