| Video Discription | #백종원 #갈치 #생선조림 매콤달콤 양념의 갈치조림! 생각보다 쉬워요 다른 생선에도 응용 가능하니까 좋아하는 생선으로 도전해보세요! =============================== [ 갈치조림 ] 2인분 기준 [ 재료 ] 물 약 3컵(500ml) 손질갈치 4~5토막(300g) 무 약 1/10개(250g) 대파 1대(100g) 국간장 1/4컵(50g) 굵은 고춧가루 약 1/2컵(45g) 물엿 2큰술(30g) 청양고추 약 3개(26g) 간 마늘 약 1큰술(24g) 맛술 2큰술(20g) 고추장 약 1큰술(15g) 황설탕 약 1큰술(11g) 꽃소금 1/6큰술(2g) [ 만드는법 ] 1. 갈치는 흐르는 물에 세척하고 칼이나 가위를 이용하여 지느러미를 잘라 준비한다. *갈치에서 비린내가 나는 경우 끓는 물에 살짝 데쳐 찬물에 헹궈 사용한다. 2. 무는 두께 0.5cm 반달모양으로 편썰어 준비한다. *생선의 두께에 따라 무의 두께도 조정해준다. *무 대신 시래기 또는 감자를 사용해도 좋다. 3. 청양고추, 대파는 두께 0.4cm로 어슷 썰거나 송송 썰어 준비한다. 4. 깊은 볼에 국간장, 물엿, 황설탕, 맛술, 간 마늘, 고추장, 굵은 고춧가루를 넣고 계량해 둔 물을 약간 넣어 골고루 섞는다. *맛술이 없을 경우 소주로 대체하여도 좋다. *간 생강이 있다면 간 마늘 양의 1/5~1/10정도를 넣어주면 더욱 맛이 좋아진다. *생선에서 비린내가 나는 경우 된장을 약간 넣어주면 비린내를 잡을 수 있다. 5. 납작한 냄비에 무를 한 장 씩 깔아준 후 그 위에 갈치를 올리고 대파, 청양고추를 골고루 올린다. 6. 만들어 둔 양념장과 남은 물을 모두 붓고 강불에 올린다. *생선이 국물에 잠기지 않을 경우 계속해서 국물을 끼얹어가며 끓인다. 7. 국물이 끓어오르면 꽃소금으로 간을 한 후 약 13~15분 졸인다. *조미료를 사용할 경우 이 때 넣는다. *생선이 두꺼울 경우 중불로 줄여 졸인다. *바닥에 있는 재료가 바닥에 눌어 붙어 탈 수 있으니 중간에 냄비를 살짝 흔들어 떼어낸다. 8. 국물이 자작하게 졸아들면 불을 끄고 완성한다. Rinse the cutlassfish under running water. Using a knife or scissors, cut off the fins. *If the fish has a fishy smell, blanch it slightly in boiling water and rinse in cold water before using. 2. Chop the radish in 0.5cm-thick half-moon shaped pieces. *Adjust the thickness of the radish pieces according to the thickness of the fish. *You can use dried radish leaves or potatoes instead. 3. Chop the Cheongyang pepper and green onion in pieces 0.4cm thick. 4. In a deep bowl, combine the soup soy sauce, brown sugar, cooking wine, minced garlic, gochujang, coarse red chili pepper powder, and some of the water. *If you do not have cooking wine, you can use soju instead. *If you have minced ginger, add about 1/5 to 1/10 of the amount of minced garlic. *If the fish smells fishy, add a bit of doenjang. 5. In a flat pot, place the radish on the bottom, followed by the fish, green onion, and Cheongyang pepper. 6. Add the sauce and the remaining water and boil over high heat. *If the fish is not completely submerged, keep scooping the soup onto the fish as it cooks. 7. Once it comes to a boil, season with fine salt and simmer for about 13 to 15 minutes. *If you are using artificial flavoring, now is the time to add it in. *If the fish is on the thicker side, simmer over medium heat. *Gently shake the pot mid-way to avoid the ingredients from sticking to the bottom of the pan. 8.
