| Video Discription | #백종원 #초간단 #전복 전복 구워 드실 때 주로 버터🧈 사용하시죠? 오늘은 간장과 참기름같이 한국 재료들로 구워봤어요! 내장 빼고 만들면 '전복 장조림'으로 반찬처럼 드실 수 있으니 한번 따라해 보세요! =================== [ 전복구이 ] [ 재료 ] *전복 손질 전복 5마리(15미) 물 1L *전복구이 데친 전복 5마리(15미) 통마늘 12개(60g) 물 약 1/4컵(40g) 진간장 약 2큰술(18g) 식용유 1과 1/2큰술(10g) 참기름 약 1과 1/2큰술(10g) 황설탕 2/3큰술(8g) [ 만드는 법 ] *전복 손질 1. 전복은 전복솔을 이용하여 깨끗하게 세척한다. * 전복솔이 없다면 사용하지 않는 칫솔을 이용하여 닦아도 좋다. 2. 냄비에 물을 넣고 끓어오르면 세척한 전복을 넣고 약 3분 정도 데친 후 찬물에 넣어 식힌다. * 전복의 크기에 따라 데치는 시간을 조절한다. 3. 데친 전복은 숟가락을 이용하여 껍질을 제거한 후 가위를 이용하여 살과 내장을 분리한다. * 전복이빨을 제거할 경우 가위를 이용하여 잘라낸다. * 전복을 회로 먹을 경우 이빨을 제거하지만 익혀먹는 경우는 제거하지 않아도 된다. 4. 데친 전복살은 껍질에 붙어 있던 면에 긴 방향으로 세 번 칼집을 넣은 후 칼집 반대 방향으로 3등분 한다. * 전복의 크기에 따라 자르는 크기를 조절한다. * 칼집을 너무 깊게 넣을 경우 끊어질 수 있으니 주의한다. 5. 마늘은 꼭지를 제거한 후 반으로 잘라 준비한다. 6. 프라이팬에 식용유를 두른 후 강불에 예열한다. 7. 약불로 줄인 후 마늘을 넣고 타지 않게 볶는다. 8. 마늘이 노릇하게 색이 나기 시작하면 중불로 올린 후 전복살, 내장을 넣고 함께 볶는다. * 내장은 생략 가능하다. 9. 마늘이 익으면 황설탕, 진간장, 물을 넣고 수분이 날아갈 때까지 졸인다. 10. 참기름을 두른 후 불을 끄고 섞는다. 11. 접시에 깨끗하게 세척한 전복 껍질을 깔고 그 위에 전복내장 또는 마늘을 먼저 담고 전복살을 맨 위에 오도록 담아 완성한다. [ Grilled abalone ] [ Ingredients ] *Preparing the abalone 5 abalones (15 abalones per kg) 1L water *Grilled abalones 5 blanched abalones (15 abalones per kg) 12 whole cloves (60g) garlic about 1/4 cup (40g) water about 2 tbsp (18g) dark soy sauce 1 and 1/2 tbsp (10g) cooking oil about 1 and 1/2 tbsp (10g) sesame oil 2/3 tbsp (8g) light brown sugar [ Directions ] *Preparing the abalones 1. Clean the abalones using a abalone brush. *If you do not have an abalone brush, use a toothbrush you don't use. 2. Fill a pot with water and bring to a boil. Add the cleaned abalones and blanch for about 3 minutes. Then, pour in cold water to let it cool down. 3. Using a spoon, deshell the blanched abalones. Using scissors, separate the flesh and viscera. *If you are removing the teeth, use scissors to cut them off. *The teeth have to be removed when eating raw abalones, but it is not necessary when they are blanched. 4. Make vertical slits on the blanched abalones and cut horizontally into thirds. *Adjust the size of the chunks according to the size of the abalones *Careful not to cut in too deep. 5. Destem the garlic and half them. 6. In a frying pan, drizzle some cooking oil and preheat over high heat. 7. Reduce to low heat and stir-fry the garlic without letting them burn. 8. Once the garlic starts to turn golden, bring the heat up and stir-fry with the abalone flesh and viscera. *You can leave out the viscera. 9. Once the garlic is cooked, add the brown sugar, dark soy sauce, and water and simmer until the moisture evaporates. 10. Drizzle some sesame oil and turn the heat off before stirring. 11.
