| Video Discription | Fried hand pies made with kefir dough, without yeast, always turn out fluffy and soft. They are can be filled with sweet or savory fillings and baked or fried. I made this recipe with a filling of eggs, green onions, dill and sour cream 30% fat. Very tasty, also, instead of sour cream, you can use finely grated cheese. Ingredients: FOR DOUGH: All purpose flour 1+1/2 cup (400 g) Kefir 1 cup (250 ml) 1 egg Sugar 1 tbsp Salt 1/3 tsp Baking soda 2/3 tsp ( or baking powder 1+1/2 tsp) FOR FILLING: 5 medium eggs Spring onion and dill 70 g(or just spring onions) Salt to taste (1/3 tsp) Black pepper 1/3 tsp Sour cream 30% - 2 tbsp (or finelly grated cheese 2 tbsp) HOW TO COOK: In a bowl for kneading the dough, mix warm kefir (you can use kefir of any fat content, I used 2.5%), soda, salt, sugar, vegetable oil and egg. Add sifted flour to liquid mixture. The dough should not be thick, it should be soft. Cover the pie dough and leave for 10 minutes to allow the dough to rest. During this time, prepare the filling. Grease the work surface with oil or sprinkle with a little flour, lay out the dough, cut into small pieces. Round each piece into a ball (I got 12 balls). Roll each ball into a flat circle, 3-4 mm thick. Place about 1 tbsp of filling on each flatbread. Connect the edges of the cake and form a pie. Place the frying pan on the stove, pour in vegetable oil, so much so that the pies are at least half immersed in it. Place the pies in the heated oil, seam side down, and fry over medium heat until golden brown. Place hot fried pies on a paper towel to remove excess oil. Fried pies are ready! Bon appetit!
