What You'll Need:
- 4 cups flour (I used 2 cups of all purpose flour and 2 cups of whole wheat flour)
- 3 1/2 tsp yeast (This is one packet of yeast plus an additional 1 1/4 teaspoon)
- 1 1/2 tsp salt
- 2 cups warm water (not hot!)
What You'll Do:
1. In a large bowl place your 4 cups of flour.
2. On the one side of the bowl, put your yeast; on the opposite side of the bowl, put your salt. 3. Take a firm spatula or wooden spoon and gently mix the yeast into the flour on the one side of the bowl. Do the same thing on the other side of the bowl with the salt and the flour.
4. To your bowl of flour, add the warm water.
5. With your spatula or wooden spoon, mix everything together until all of the flour is mixed in. You want your dough to be a shaggy ball. You don’t want it to be a puddle in the bottom of your bowl. If it’s a puddle of very moist dough, gradually add more flour by 1/4 cup amounts, until it comes together into a shaggy ball. Since this is a no knead recipe, we do not need to knead the dough, and the dough will not be nice and smooth, like a normal bread dough would be.
6. Cover your bowl with plastic wrap, or a towel, and place the ball into a warmer area of your house, away from any drafts such as air-conditioning, furnace, fans, wind, etc.
7. Let the bread deal rise for at least an hour and a half, or longer if needed, until the dough has doubled in size.
8. After your dough has doubled in size, get out your Dutch oven, with its lid. Place it into your oven. Preheat your oven to 450°. This is if you were using an enameled Dutch oven. If you are using a “raw,” non-enameled, non-smooth, black-inside Dutch oven, preheat your oven to 425°. Your oven is going to preheat with the Dutch oven inside.
9. In the meantime, get out a large piece of parchment paper. Dust it with flour. Very gently scrape the bread dough out of the bowl onto the flowered piece of parchment.
10. Use your floured hands to gently shape the bread dough into a uniform circular ball.
11. Sprinkle the top of your dough with more flour.
12. Drape a clean kitchen towel over the top of your dough, And let the dough rise, undisturbed, for 30 minutes. In the meantime keep your Dutch oven in your hot oven.
13. Once the 30 minutes are up, take your Dutch oven out of your oven. Remove the lid. Take the towel off of your bread dough.
14. Grab your bread dough by the corners of the parchment paper. Gently lift your bread dough into your Dutch oven, and center the parchment and your dough within the Dutch oven.
15. Replace the lid onto your Dutch oven and stick it in the oven. Set your timer for 30 minutes. Do not open the oven and do not open and take the lid off of your Dutch oven.
16. After 30 minutes are up now you can take the lid off of your Dutch oven and let your bread bake for 10 more minutes.
17. After those 10 minutes are up remove your Dutch oven from your oven. Very carefully remove your bread from the Dutch oven and place it onto a wire rack. Let the bread dough cool as long as you can, until it’s completely cooled. I know this is hard because warm Bread is especially delicious with some butter on it, but letting the bread cool completely before cutting into it allows the bread to keep cooking. The crust that is formed traps the heat inside and the cooking process continues.
18. Once your bread has cooled or once you can no longer stand the wait, use a serrated knife to cut your bread into nice thick slices. And enjoy with Butter, or toast it up, or make a grilled cheese, or make just as regular sandwich, whatever you want to do with your toast enjoy!
