| Video Discription | #백종원 #고구마스틱 #길거리간식 휴게소나 길거리에서 자주 사드시던 간식이죠? 찐 고구마, 군고구마를 이을 바삭한 '고구마스틱' 알려드릴게요 솔직히 설탕 코팅을 해야 맛의 완성입니다😬 진짜 뺵다방 아저씨가 많이 드릴게요ㅎㅎ ====================== [ 고구마스틱 ] [ 재료 ] 고구마 약 1개~2개(300g) 식용유 1.5L 황설탕 약간 [ 만드는 법 ] 1. 고구마는 깨끗하게 세척한 후 양 끝을 잘라낸다. 2. 고구마의 한 면을 얇게 썰고 썰은 면이 바닥으로 가게 하여 흔들리지 않게 고정한 후 0.5cm 두께로 길이가 길게 채 썬다. *채칼은 고구마가 부서지고 손이 다칠 수 있으니 최대한 칼을 사용한다. *고구마의 두께가 일정해야 색과 튀김 정도가 균일하게 나온다. 3. 채 썬 고구마는 찬물에 약 15분 정도 담가 전분기를 제거한다. 4. 전분기를 제거한 고구마는 체에 밭쳐 건져낸 후 한 번 더 물에 헹궈낸다. *너무 많이 헹궈낼 경우 단맛이 많이 빠지니 주의한다. 5. 넓은 면보 위에 채 썬 고구마를 올린 후 물기를 완전히 제거한다. 6. 깊은 프라이팬에 식용유를 붓고 약 160-170도로 예열한다. *고구마를 넣고 5초 뒤에 떠오르는 온도가 적당하다. 8. 기름이 예열되면 고구마를 넣고 잘 저어가며 골고루 색이 나도록 약 4~6분 정도 튀긴다. *고구마를 한 번에 넣을 경우 넘칠 수 있으니 3~4번에 걸쳐 나눠 넣는다. *4분 이후부터는 색과 바삭한 정도를 확인 하면서 시간을 조정한다. 9. 튀겨진 고구마는 체로 건져낸 후 기름기를 털어 완성한다. *기름을 제거한 후 기호에 맞게 설탕을 뿌려 먹어도 좋다. *설탕이 겉도는 게 싫다면 프라이팬에 설탕을 뿌린 고구마스틱을 넣고 중불에 설탕이 녹을 정도까지만 볶아 식힌다. Slice off one surface of the potato so that you can place it flat on the cutting board. Soak the sweet potato sticks in cold water for about 15 minutes to remove the starch. 4. After 15 minutes, scoop out the sweet potato sticks and rinse one more time. *Be careful not to rinse it for too long or the sweet potato may lose its sweetness. 5. Place the sticks on a large cloth and pat them dry. 6. In a deep frying pan, preheat to about 160-170 degrees celsius. *Put a stick into the pot. If it floats in 5 seconds, the temperature is just right. 7. Once the oil is heated, add the potato sticks and deep-fry for about 4 to 6 minutes, stirring constantly. *The pan may overflow if you put all the potatoes in at once, so add them in 3 to 4 batches. *After 4 minutes, check the color and crispiness and adjust the time. 8.
