| Video Discription | 🥨소프트프레첼만들기 Soft pretzel recipe🥨 *6개 분량 따듯한물 160g lukewarm water 설탕 5g sugar 이스트 6g instant dry yeast 소금 3g salt 녹인무염버터 20g unsalted butter (melted) 중력분 260g all purposed flour 물 400g water 베이킹소다 20g baking soda 녹인무염버터 10g unsalted butter (melted) --------------------------------------------------- *저는 중력분을 245g으로 계량해서 만들었는데 반죽이 약간 질어서 작업하기가 번거롭더라구요. 그래서 레시피에는 15g정도 밀가루를 추가했는데 작업할 때 그래도 조금 진 느낌이 있으시다면 손에 덧가루를 많이 묻히면서 작업해주세요. 반죽을 길게 펴줄 때는 작업대에 밀가루가 많이 있으면 잘 밀리지가 않으므로 밀가루를 너무 많이 뿌리지 않도록 주의해주세요! 바닥에 들러붙지 않을 정도로만 살짝씩 뿌려가며 작업해주시면 됩니다. 마지막으로 소다물에 담구실 때에는 물 온도가 뜨거운지 확인하시고 조심해서 작업해주세요! 큰 주걱을 활용해서 작업해주시면 좋을 것 같아요 ㅎㅎ 만든 프레츨은 밀봉해서 냉동보관해주세요! 냉동보관 해둔 프레츨은 드시기 전에 230도에 3~4분간 돌려주시면 맛있게 드실 수 있습니다! 껍질이 바삭한게 다음날 데워먹는게 더 맛있더라구요 🥰 예열도 같은 온도에 해주시면 됩니다 ㅎㅎ 크림치즈나 체다치즈소스를 발라드시면 맛있습니당💛 -------------------------------------------------------------------------- 1) 40~45도 정도의 따듯한 물에 설탕과 이스트를 넣고 이스트가 밀크폼처럼 올라올 때까지 그대로 둔다. (약 5분) 2) 녹인버터, 소금, 중력분을 차례로 넣고 가루가 날리지 않을 때까지 섞는다. 한 덩어리로 뭉쳐준다. 3) 핸드 믹서 혹은 반죽기로 약 5분간 반죽한다. (중속-고속-중속 순서대로) 4) 둥글리기 한 뒤 식물성 오일을 발라둔 볼에 담고 크기가 두배가 될 때까지 발효한다. (따듯한 곳에서 약 20분) 4-1) 발효하는 동안 물에 베이킹 소다를 넣고 소다가 다 녹을 때까지 끓여둔다. 5) 반죽을 6개로 분할 한 뒤, 둥글리기 하고 약 60~65cm 길이의 긴 막대형 모양을 만들어준다. 반죽 끝을 잡고 두 번 교차시킨 뒤 위로 반 접어올려 마무리한다. 테프론 시트 위에 올려둔다. 6) 반죽을 베이킹 소다 물에 담구어 20-30초간 골고루 적셔준다. 테프론시트위에 올리고 프레츨용 소금을 뿌린다. 7) 230도로 예열된 오븐에서 9분간 굽는다(또는 황금갈색이 날 때까지). 따듯한 상태의 프레츨 위에 녹인무염버터를 발라 마무리한다. 8) 크림치즈를 발라 드시면 맛있습니다. 0. Form the dough into a "U" shape. Bring the ends of the rope together to form a circle. Twist the ends and fold down to the bottom of the U to form a pretzel shape. 7. Dip each pretzel in the boiled baking soda bath for 25~30 seconds. Place the pretzels on the baking sheet. Sprinkle with pretzel salt. 8. Bake for 9 minutes until golden brown.
