| Video Discription | Serve:5-6 pax Ingredients: Laksa noodles (cap cili/cili brand) - 450g (soaked and rinsed) Lemongrass(Serai)-3 stalks Galangal(Lengkuas)- 100g Turmeric(Kunyit)-40g Kesum Leaves-70g Tamarind slice ( Asam keping)-8 pieces (20g) Shallots-250g Anchovies (Ikan bilis)- 150g Belacan Shrimp Paste - 1 tablespoon Torch Ginger Flower (Bunga kantan)- 2 stalks(remove stems) 1 can of Sardine- 425g **(keep the tomato sauce for the broth later) Water- 4.5 litre **Water-400ml ( Use to blend the shallots, galangal, turmeric and pineapple) Pineapple cut -250g Tamarind paste(Asam Jawa)- 3 tablespoons Chili gilling- 350ml Sugar-4 tablespoons Salt-2 tablespoons Garnishing: Cucumber Red Onions Pineapple Sardines Red Chillies Mint Leaves Torch Ginger Flower Prawn Paste ************************************************* Laksa Noodles: 1.Put laksa noodles into boiling water. Cover the wok and simmer until soft. 2.Then, drain the water and put the laksa noodles aside. Garnishing: 1. Cut the pineapples, red chillies, cucumber, red onions and torch ginger flower. 2. Remove bones from sardines 425g. **(Keep the tomato sauce for broth later. ) 3.Some prawn paste. 4.Then, put the garnishing aside. Laksa Broth: 1. Blend 250g of pineapple with 150ml water. **(Add into the broth later. ) 2.Blend 250g of shallots, 100g of galangal and 40g of turmeric. **(Add into the broth later. ) 3. Boil 4.5 litre of water. Then, add in 150g anchovies, 3 stalks of lemongrass, 2 stalks of torch ginger flower. 4.Continue to add in 1 tablespoon of belacan shrimp paste. 5.**Then, add in blended shallots, galangal and turmeric. Also, blended pineapple. 6.Add in 350ml chili gilling, tomato sauce (from a can of sardine 425g), and 70g of kesum leaves. 7.Stir and mix well. Cover the pot and simmer over low heat for 2 hrs. 8.After that, add in 2 tablespoons of salt, 4 tablespoons of sugar and 3 tablespoons of tamarind paste. (According to taste) 9.Simmer for another 15 minutes and ready to be served. 10.Garnish the laksa noodles with cucumbers, red onions, sardines, pineapple, red chillies, torch ginger flower and mint leaves. 11.Serve with prawn paste.
